Fresh and creamy choux cake, filled with strawberries, whipped cream and pastry cream. Perfect for a 30th birthday or anniversary, but you can create any numbers you’d like.

Choux pastry filled with pastry cream, strawberries and whipped cream.

Ingredients

Instructions

    1. Preheat your oven to 180 degrees Celsius.
    2. Place the template onto a baking tray and cover it with a sheet of baking paper.
    3. Trace the template by piping choux pastry on top.*
    4. Remove the template from underneath the baking paper.
    5. Bake for 20 - 30 minutes.
    6. Let it cool to room temperature.
    7. Whip up whipping cream, with the sugar and vanilla extract, to a stiff peak.
    8. Cut the choux 30 in half horizontally.
    9. Pipe pastry cream into the bottom half of each number.
    10. Cut the tops off of the strawberries.
    11. Alternate between placing strawberries and piping whipped cream onto the bottom layers.
    12. Place top layer on top of the strawberries and whipped cream.

*This recipe has enough ingredients for two 30 choux cakes.
