Colourful The Little Mermaid Birthday Cake, with sand cookie "sand", white chocolate buttercream and sponge cake.

Ingredients

Decorations

  • ±100 grams of Brown or Black Candy Melts
  • ±100 grams of White Candy Melts
  • Candy/Chocolate Food Colouring: blue, green, yellow, red, pink & purple.

Instructions

  1. Place the template onto a cutting board and cover it with a sheet of acetate.
  2. Melt the Candy Melts in a heat proof bowl on top of a saucepan with a small layer of water in it, on medium heat.
  3. Use candy food colouring or food colouring powder to create the right colours.
  4. Using a toothpick or a piping bag, trace and fill in the design with the right colours.
  5. Let the decorations set.
  6. Cut four cake circles of each colour of ⌀16cm and one cake circle of each blue and purple and two of pink of ⌀12cm.
  7. Brush each cake circle with simple syrup.
  8. Prepare 3 batches of White Chocolate Buttercream.

Sand Castle Cake

  1. Place a pink layer of the smaller cake circles onto a cake board, attaching it with a little buttercream.
  2. Pipe on a layer of buttercream and add the blue cake layer.
  3. Pipe on a layer of buttercream and add the purple cake layer.
  4. Pipe on a layer of buttercream and add the pink cake layer.
  5. Spread on more buttercream.
  6. Cut a strip of pink cake, as shown in the video, creating the top of the sand castle.
  7. Crumb coat the entire "sand castle".
  8. Refrigerate for one hour, until fully set.
  9. Add another layer of buttercream and press cookie crumbs onto the cake.
  10. Refrigerate for one hour, until fully set.

Ocean Cake

  1. Place two pink layers of the bigger cake circles onto a cake board, attaching them to the board with a little buttercream.
  2. Pipe on a layer of buttercream and add two blue cake layers.
  3. Pipe on a layer of buttercream and add two purple cake layers.
  4. Pipe on a layer of buttercream and add two pink cake layers.
  5. Pipe on a layer of buttercream and add two blue cake layers.
  6. Pipe on a layer of buttercream and add two purple cake layers.
  7. Crumb coat the entire cake with buttercream.
  8. Refrigerate for one hour, until fully set.
  9. Cover the entire cake in blue buttercream.
  10. Refrigerate for one hour, until fully set.
  11. Place the cake onto a bigger cake drum.
  12. Add (darker) blue buttercream smudges to the sides of the cake.
  13. Add white buttercream and cookie crumbs onto the cake drum and the bottom of the cake.
  14. Add the decorations to the cake, attaching them with white chocolate buttercream.

Assembling

  1. Make an imprint on top of the ocean cake with a cake ring (⌀12cm).
  2. Add straws or wooden supports inside of the circle, to support the sand castle cake.
  3. Add some buttercream and add the sand castle cake on top.
  4. Add more cookie crumbs on top of the cake.
  5. Add the mermaid decoration against the sand castle.
  6. Add the chocolate shell onto sand castle cake.
