The perfect way to add some fresh strawberry flavour to your cake or dessert. Try using it to make some fluffy strawberry cake.
- 600 grams of (Frozen) Strawberries (Stems Removed)
- Optional: Thaw frozen strawberries.
- Puree the strawberries and pour the puree through a fine mesh strainer.*
- Pour into saucepan and cook over low to medium heat until reduced to 80 - 90 millilitres, about 60 minutes.
- Let it cool completely.
This recipe makes about 80 - 90 millilitres of strawberry reduction, which weighs about 140 grams.
*You should be left with about 520 grams of strawberry puree.
