Strawberry reduction, made from fresh or frozen strawberries.


  • 600 grams of (Frozen) Strawberries (Stems Removed)


  1. Optional: Thaw frozen strawberries.
  2. Puree the strawberries and pour the puree through a fine mesh strainer.*
  3. Pour into saucepan and cook over low to medium heat until reduced to 80 - 90 millilitres, about 60 minutes.
  4. Let it cool completely.

This recipe makes about 80 - 90 millilitres of strawberry reduction, which weighs about 140 grams.


*You should be left with about 520 grams of strawberry puree.
