Chewy and moist strawberry blondies, topped with strawberry white chocolate ganache and strawberry hearts.

Ingredients

Strawberry Blondies

  • 150 grams of White Chocolate
  • 110 grams of Butter
  • 180 grams of Granulated Sugar
  • 1 teaspoon of Vanilla Extract
  • 110 grams of Flour
  • 20 grams of Freeze Dried Strawberry Powder
  • 3 Eggs*
  • Optional: Pink Food Colouring

Strawberry White Chocolate Ganache

  • 40 grams of Whipping Cream
  • 120 grams of White Chocolate
  • 5 grams of Freeze Dried Strawberry Powder
  • Optional: Pink Food Colouring

Decoration

  • ± 100 grams of Strawberries

Instructions

  1. Preheat your oven to 180 degrees Celsius.
  2. Prepare your brownie pan (22,5 cm × 22,5 cm × 5 cm) by brushing the inside of the pan with butter and lining it with baking paper.
  3. Whisk together the flour and freeze dried strawberry powder, in a separate bowl.
  4. Melt the butter and chocolate in a heat proof bowl on top of a saucepan with a small layer of water in it, on medium heat. Stir until the butter and chocolate have melted completely and are well combined.
  5. Use a whisk to mix in the sugar and vanilla extract, then add in the eggs one by one.
  6. Next sift in the flour mixture and mix through as well.
  7. Pour the batter into your prepared brownie pan.
  8. Bake the blondies for 20 to 25 minutes.
  9. Let them cool completely.
  10. Break your chocolate into small pieces, place it into a heat proof bowl and add the whipping cream.
  11. Place the bowl on top of a saucepan with a small layer of water in it, on medium heat. Stir until the chocolate has melted completely and the whipped cream and chocolate are well combined.
  12. Mix in the freeze dried strawberry powder.
  13. Pour onto the blondies.
  14. Refrigerate until fully set, about one hour.
  15. Cut strawberry hearts, as shown in video, and place them on top.
  16. Cut the blondies into squares, or any shapes or size you'd like.

When are they done?

You'll know the blondies are done when you insert a skewer or knife into the brownies, pull it out and only a few moist crumbs stick to it. If there's wet batter attached: place it back in the oven.

Notes

*Make sure this ingredient is at room temperature.

TIP: Use cookie cutters or a template to create fun shapes.
