Almond Cookies

If you like almonds, you’ll love these cookies! They’re chewy, sweet but not too sweet and full of almond flavour.

Chewy and sweet almond cookies.

Ingredients

  • 200 grams of Almond Meal
  • 20 grams of Sunflower Oil
  • 90 grams of Butter*
  • 100 grams of Light Brown Sugar
  • 80 grams of Granulated Sugar
  • 1 Egg*
  • 1 teaspoon of Vanilla Extract
  • 120 grams of Flour
  • 3 grams of Baking Soda
  • Optional: Almond Halves

Instructions

  1. Preheat your oven to 180 degrees Celsius.
  2. Combine almond meal and sunflower oil.
  3. In a separate bowl, combine the flour and baking soda.
  4. Mix the butter and two kinds of sugar together.
  5. Add the almond mixture, egg and vanilla extract. Mix together well.
  6. Slowly add the flour mixture and keep mixing.
  7. Use an icecream scoop to make the cookies.
  8. Place cookies on a baking sheet lined with baking paper.
  9. Optional: Decorate them with almond halves.
  10. Bake the cookies for 8 to 10 minutes, until they are golden brown around the edges.
  11. Let them cool on the rack.

When are they done?

You'll know the cookies are done when the edges start to set.

Notes

*Make sure this ingredient is at room temperature.
