Ingredients

  • 230 grams of Butter*
  • 100 grams of Granulated Sugar
  • 100 grams of White Sugar**
  • 45 grams of Freeze Dried Strawberry Powder
  • 1 Egg*
  • 220 grams of Flour
  • 6 grams of Baking Soda
  • 230 grams of White Chocolate Chips
  • 20 grams of White Chocolate Chips
  • Optional: Pink Food Colouring

Instructions

  1. Preheat your oven to 180 degrees Celsius.
  2. Whisk together flour and baking soda.
  3. Beat together the butter and both kinds of sugar.
  4. Add the freeze dried strawberry powder and mix well.
  5. Optional: Add pink food colouring.
  6. Add the egg.
  7. Mix together until well incorporated.
  8. Add the flour mixture and mix again.
  9. Add the larger amount of chocolate chips and mix.
  10. Form 20 cookie balls from the dough and place five at a time onto a baking sheet lined with baking paper.
  11. Flatten each cookie ball a little, adding some chocolate chips on top of each one.
  12. Bake for 10 - 15 minutes.
  13. Let them cool for about 5 minutes on the baking sheet, then transfer to a wire rack and let them cool completely.

When are they done?

You'll know the cookies are done when the edges start to brown.

Notes

*Make sure this ingredient is at room temperature.
**In Dutch this is called 'witte basterdsuiker', I couldn't find a proper translation. It's like brown sugar, but made with clear sugar syrup and granulated sugar.
