Vanilla Madeleines

Little vanilla cakes with a shell shape, a sponge cake texture and almond flavour. These madeleines are perfect for anyone looking for a cake to snack on, whether they prefer it with or without chocolate chips or dip.

Vanille Madeleines with almond flour, with or without chocolate chips.

Ingredients

  • 120 grams of Butter
  • 75 grams of Flour
  • 75 grams of Almond Flour
  • 2 Eggs*
  • 120 grams of Sugar
  • 1 teaspoon Vanilla Extract
  • Optional: 100 gram (Milk) Chocolate Chips
  • Optional: 100 grams of (Dark) Chocolate

Instructions

  1. Brush the madeleine moulds with butter and dust with flour, to prevent the madeleines from sticking.
  2. Melt the butter and let it cool to room temperature.
  3. Whisk together the flour and almond flour.
  4. Combine the eggs and the sugar.
  5. Whip up the eggs until they reach the ribbon stage.
  6. Fold in the vanilla extract and melted butter.
  7. Fold in the flour mixture.
  8. Optional: Fold in the chocolate chips.
  9. Pipe or scoop into the prepared mould.
  10. Refrigerate for two hours.
  11. Preheat your oven to 180 degrees Celsius.
  12. Bake the cake for 15 to 20 minutes.
  13. Let them cool completely before gently removing them from the mould.
  14. Optional: Pipe or scoop melted chocolate into the clean mould, place a madeleine on top and refrigerate for one hour until completely set.

Notes

*Make sure this ingredient is at room temperature.
