Any fan of pistachio and white chocolate should really try these cookies! They’re chewy and tasty.

Chewy and sweet pistachio cookies with white chocolate chips.

Ingredients

  • 200 grams of Pistachio Meal
  • 20 grams of Sunflower Oil
  • 90 grams of Butter*
  • 100 grams of Light Brown Sugar
  • 80 grams of Granulated Sugar
  • 1 Egg*
  • 1 teaspoon of Vanilla Extract
  • 120 grams of Flour
  • 3 grams of Baking Soda
  • Optional: 100 grams of White Chocolate Chips
  • Optional: 25 grams of White Chocolate Chips for decorating

Instructions

  1. Preheat your oven to 180 degrees Celsius.
  2. Combine Pistachio meal and sunflower oil.
  3. In a separate bowl, combine the flour and baking soda.
  4. Mix the butter and two kinds of sugar together.
  5. Add the pistachio mixture, egg and vanilla extract. Mix together well.
  6. Slowly add the flour mixture and keep mixing.
  7. Optional: Mix in the bigger amount of white chocolate chips.
  8. Use an icecream scoop to make the cookies.
  9. Place cookies on a baking sheet lined with baking paper.
  10. Optional: Add some white chocolate chips on top.
  11. Bake the cookies for 8 to 10 minutes, until they are golden brown around the edges.
  12. Let them cool on the rack.

When are they done?

You'll know the cookies are done when the edges start to set.

Notes

*Make sure this ingredient is at room temperature.
