Pistachio no-bake cheesecake, made with pistachio paste and topped with Pistachio Flour.

Ingredients

  • 400 grams of Cream Cheese*
  • 150 grams of Powdered Sugar
  • 250 grams of Pistachio Paste
  • 250 grams of Whipping Cream
  • 200 grams of Pistachio Cookie Crumbs
  • 40 grams of Butter
  • 50 grams of Pistachio Flour

Instructions

  1. Prepare your ring mould (16 cm) by lining it with acetate.
  2. Melt the butter and combine with pistachio cookie crumbs.
  3. Press cookie crumbs into the mould.
  4. Whip up whipping cream and set aside.
  5. Mix together cream cheese, powdered sugar and pistachio paste.
  6. Fold whipped cream into cream cheese mixture.
  7. Pour mixture onto pistachio cookie base.
  8. Sift over the pistachio flour.
  9. Refrigerate until set, at least eight hours, until fully set.
  10. Remove from mould and remove acetate.

Notes

*Make sure this ingredient is at room temperature.
